Job Duties and Requirements:
- Produce and/or ensure production of the highest quality foods to guests
- Ensure that the kitchen is in sufficient condition that it will pass a health inspection at any and all times
- Collaborate with other kitchen and managerial personnel to create, plan, develop, and/or improve menu items
- Supervise, schedule and coordinate activities of cooks and other kitchen helpers
- Weigh, measure and mix ingredients/seasoning to be used throughout the day in order to guarantee taste profile stability
- Butcher, cut and bone ingredients (as necessary) for quality and to minimize waste
- Prepare (bake, roast, broil, etc.) or instruct/oversee preparation of food items that need to be cooked in advance for use throughout the day
- Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices.
- Proficient in the use and tutelage of all kitchen equipment including fryers, ovens, grills etc.
- Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils
- Review inventory records and requisition supplies accordingly
- Inspect work areas and equipment to ensure proper procedures are being followed
- Train, instruct and/or correct cooks and other kitchen workers on the proper food preparation and storage procedures
- In collaboration with the business manager - recruit, interview, hire, train, motivate and evaluate all kitchen staff to ensure proper staffing and smooth kitchen operations
- Train, instruct and/or correct cooks and other kitchen workers on the proper use of kitchen equipment, health standards, and general cleanliness standards
